JOB DETAILS:
Proflight Zambia is seeking a highly motivated and experienced Catering Manager to lead and oversee our in-flight catering services. The ideal candidate will be responsible for ensuring the highest standards of food quality, service, and safety for our passengers while managing the operational and logistical aspects of the catering department with specific focus on inventory management and cost control. Monitoring the department and producing monthly reports will be a key part of this function.

1. Responsibilities
• Oversee daily catering operations, ensuring timely meal delivery and managing inventory to minimize waste.
• Coordinate with suppliers to source quality ingredients while ensuring food safety and hygiene standards are upheld.
• Collaborate with chefs and culinary teams to create and update in-flight menus
• Ensure that all menu items are consistent with Proflight Zambia’s brand and quality standards.
• Supervise and train catering staff, ensuring a high level of performance and adherence to company policies.
• Conduct regular performance evaluations and provide feedback to staff.
• Foster a positive and productive work environment.
• Prepare and manage the catering department’s budget, monitoring expenses and identifying cost-saving opportunities.
• Negotiate contracts with suppliers and vendors to ensure the best value for the company.
• Implement and monitor quality control procedures to ensure all meals meet the airline’s standards for taste, presentation, and safety.
• Address customer feedback related to catering services and implement improvements as needed.
• Work closely with the customer service and cabin crew teams to address passenger needs and preferences related to in-flight meals.
• Ensure compliance with all local and international food safety regulations and industry standards.
• Conduct regular audits and inspections to ensure adherence to safety protocols
• Monthly reporting on KPIs which include consumable and non-consumable inventory, per head catering cost by route, catering delivery on time performance, quality performance report.

2. Qualifications And Experience
• A diploma or degree in Hospitality Management, Catering, or a related field.
• A minimum of 2 years of experience with inventory control or procurement in a management role.
• Health and Safety Standards and understanding
• Proficiency in Microsoft Office Suite with strong Excel skills (test will be given during interview).
• Strong budgeting and financial management skills.
• Experience with Procurement and Stock control policies and procedures.
• Proven experience in team management and staff development.
• Member of the Zambia Institute of Purchasing and Supply (ZIPS) is an advantage.
• Knowledge of aviation industry trends and regulations is an added advantage.
